How does one succeed here?

I would seriously consider letting myself be vassalized by one horde or another, which requires them to occupy all your territories simultaneously. If you can pull this off before any provinces defects to them, which would be inevitable should multiple hordes start sieges on your territory, you are quite safe to build up your economy. No one will attack you. The days of the horde will end eventually, at which point you can simply cancel vassalization (starting a war with them again) and attack them from a much stronger position. Even should you lose a few territories, you'll keep the cores anyway - so it should be possible to reclaim them relatively easy once the waiting game is over.

I would seriously consider letting myself be vassalized by one horde or another, which requires them to occupy all your territories simultaneously.
Virtually impossible since Georgia is bordered by three hordes. It's very unlikely that only one of them will occupy all your territories. But if it does happen, and it happens to be Qara Koyunlu, you can safely assume that they are going to gobble you up completely. There's no reason for them to vassalize Georgia since Georgia is their only enemy at the start of the Grand Campaign.

I've played as Georgia twice. Georgia starts out with several ships and a couple of regiments. Use them to temporarily seek shelter in (read: annex immediately) some Balkan regions. In my first I game took Wallachia, in my second game I dow'd Montengro, followed by Ragusa. Wallachia is close to the horde and lacks a port. They are also bordered by the Turks, although they never seem to show much interest in Wallachia. Montenegro and Ragusa are dangerously close to Hungary, and Montegro is a Venetian core. Ragusa is Catholic and needs to be converted. They are poorer than the Romanian lands, but if you're quick you can easily colonize Madeira, perhaps the Canaries too if you're lucky. Choose your poison, both options work.
I also recommend using settlement policies to convert your fresh new lands to your awesome culture.

Don't worry too much about your Georgian homeland. The provinces will defect back to you in the first ~100 years thanks to the inherent instability of the hordes.

I just realized I misspelled one of three words in the title. Damn late-night gaming!

I was playing around with the idea of being vassalized by the Golden Horde, but that would require the Golden Horde to occupy all of my provinces and not have the Timmies take one or something. Seems difficult to do. Though, I wouldn't be particularly interested with keeping all of my provinces since it might be to my advantage to pack up and move somewhere else. Any thoughts on going to the New World as an Oriental tech minor? How does one get the naval range and QftNW by a reasonable time?
