There are two major expansions: "Sword of Islam" (makes Muslim rulers playable) and "Legacy of Rome" (expands Byzantine Empire gameplay and adds retinue units). Both are a must-have imho. Then there are a bunch of rather cosmetic small DLCs you don't really need, they just add more historic coats of arms, cultural faces, music or troop skins. I don't think there is a "complete package" out there on Steam right not, you might have to wait for a special sale (I myself bought CK2 and all the first small DLCs before SoI as a bundle on steam, but that was some special clearance deal, iirc)

Steam will definitely be having a heavy sale on all the DLC around Xmas (like 50-75% off), so if you are interested in any of the cosmetic stuff, best to wait until then.

As they have said, Sword of Islam and Legacy of Rome are the big ones, although you can forgo SoI if you aren't interested in playing Muslims. LoR does have some (small) affects on everyone, but not buying it also won't cause you to lose out on much if you aren't interested in playing Byzantium. The Ruler Designer is also one I get a lot of use out of. The Republic, which is another big one, is coming out pretty soon, too. I would only get the other DLCs (graphics/music packs) if they're way on sale if you do at all. As for Sunset Invasion, well, that's one you'll have to decide on your own.

Ok I got it and very excited. Another question for you experts. Which country or person should I start with to learn the game? As I am a noob with this game and genre. Thanks :)
The consensus answer to that is "some count in Ireland". You will be independent and relatively safe from the world's harms.

Well, the default recommendation would be any Irish duke, because you can unite the green isle pretty quickly and gain your first king title without much interference from bigger neighbors.

Just one thing: Remember, this game is about family, not about conquering - the more land you conquer (especially outside your de jure realm), the more hassle it will be, even more for a new player. In a way, more "Sims", and less "Medieval: Total War". Have fun! :)

Depends on what you want, but I'd suggest picking a Duke in some established Kingdom. Gives you protection from your King yet leaves you with a bit of freedom as you tend to have a few counties and some vassals. England was where I started out, but Russia does provide lots of big independent Duchies. If you want a small'ish kingdom the Iberian peninsula has several to choose, with the added benefit of muslim neighbours with the Holy War Casus Belli.

Irish Count or Duke is your safest bet.

...but Russia does provide lots of big independent Duchies.

Not sure if playing in Russia, major target of the Mongols, is a good advice for a newbie XD

Usual answer: Irish Duke
My answer: One of the bigger French Dukes, namely the Dutch one, the bigger one down there in Aquitaine and of course Duke William. Brittany may also be good, as you can become king rather quickly after usurping another duchy. It's also pretty solid and unlikely to have major revolts, as long as you treat your vassals nicely.
