Will save games from patch 2.2 be able to carry over to patch 2.2.1? I've only got 100 years to go until I finish the game, I'm just trying to see if I should convert to EUIV now or after the patch.

If you are close to finish a game just turn off auto updates on Steam. That way you will not get the update until you want to.
Unfortunately, I've tried that, but it doesn't work. If this is a minor patch would it make all saves before it outdated or is there hope?
I don't believe the devs have explicitly stated either way. I can see if you are literally on 2.2. there might be an issue, but not if you are on 2.2.0.9 - 2.2.1 will be virtually identical to that.
That is not true. All that does is stop it updating until you next play the game.
The only way to stop it updating is to run Steam in offline mode, or copy the CK2 folder from under Steam to some other place before the update comes down.
Well, I'm on 2.2. so I guess the best thing to do would be to convert it to a EUIV save. Would there be anyway to update a save like this if it's not compatible?
The converter needs to be updated before you can use it with 2.2, I'm afraid. Once the current beta patches become official (2.2.1) then the devs have said they'll start work on the converter to make it work with CK2 2.2.x and EU4 1.8.x . At the moment you can only use it with 2.1.6 -> 1.7.3 . Just put the game aside until the converter is fixed.
