IIRC they do, but only 1/100 years. I presume they can convert provinces too, it's just unlikely that they'll own a province eligible for conversion.

OTOH You can increase their colonists as for any nation by altering the colonists.csv and traders.csv.

I wouldn´t recommend playing as China. I tried it once, you don´t know any of your neighbors, your tech costs are atrocious, you can´t even promote a tax collector for 50-60 years, and all thier provinces are layed out like they were in western Europe.

Good luck with Turkey. I've never played them personally, but I've heard good things about them. A hint--look out for Europe earlier on, wait until you have most of the muslim world under your thumb before you start eating Europe. Or you could try to knock them out early. Your choice :D

Initial plan is to take them ALL early on and enjoy fruits of early labour later on :D
