You can start as Songhai and use mission tree to convert later.
I would start as one of the African nations but there is possibility to start as totemist nation, reform and than invade Europe. Totemist gives more bonuses than fetishist but the start is slower

I'm currently playing Mutapa->Zimbabwe, and was a little surprised that it's technically possible to form the Roman Empire and use that decision to migrate to Europe. Certainly worth considering...

Easiest is Animist Castile (hint: Canary Isles), which is very easy to turn into an Inti Castile (which you can reform into a theocracy/republic if you so wish, or form supercharged Incans with). If you don't actually wanna convert anything, I guess you could do the same with Aragon, France, or England. Ottomans may be harder to switch with, although it should be possible if you play the early game right.

Oirat. Just save up enough points to reform out of horde when you have all the provinces you need. Also as Tengri you could pick Christian syncretic if you really wanted to.

Don't let their distance on the map from your goal fool you. Horde is always the easiest expansion option and Oirat is the strongest pagan horde.

Perm. Tengri Roman Empire. Or you can convert to Tengri as Muscovy, maybe. I'm not quite sure if that's possible. But Tengri nations as pagans can form the Roman Empire. Muscovy is also the "Third Rome". Roleplay!

You need to colonize the uncolonized part of the Canary Isles, then send an unfunded missionary over to convert it, spawn animist rebels, and then just let them do their thing. :) Good luck. If you want to switch to Inti or Nahuatl, there are provinces in the new world you can take that give you an event.

Sometimes when I colonise TC land it randomly converts its religion and culture to mine at some point during the colonisation process, without an event. Any idea what causes this and how to avoid it to do stuff like this?
It happens because of changes introduced in Leviathan, provinces in TC regions get their culture and religion overwritten when the colony finishes, if the settlers outnumber the natives in the province. That's the official line anyway, but I've experienced conversions even when there were 5-6000 natives, and those couldn't have been outnumbered since a colony finishes when it gets to 1000 colonists. If it bothers you try recalling the colonist close to completion, or in sparsely populated provinces where there are less then 1k natives when you'd outnumber them.

According to the wiki: "If a colonist is present when a colony in a Trade Company Region is finished, the province will be converted to the religion of the parent nation on the following day (when the colonist returns to the capital)."

So, if you don't want it to be converted, bring your colonist back home asap.

It happens because of changes introduced in Leviathan, provinces in TC regions get their culture and religion overwritten when the colony finishes, if the settlers outnumber the natives in the province. That's the official line anyway, but I've experienced conversions even when there were 5-6000 natives, and those couldn't have been outnumbered since a colony finishes when it gets to 1000 colonists. If it bothers you try recalling the colonist close to completion, or in sparsely populated provinces where there are less then 1k natives when you'd outnumber them.
Super strange. It's absolutely never occurred at the official timing you've listed there. I've never had a colony flip religion when the colony completes, only when it starts or colonist arrives or at about 200-500 settlers. And yeah, I've seen conversions happen on 6k before, especially if I spam the colonist back and forth to have it arrive at the colony multiple times. That said I do recall that low pop colonies tend to convert more often than not. In any case it does seem to be linked to the presence of a colonist so I guess if I just recall the colonist immediately after it arrives and never resend it'll work.
