So the Norse religious leader is called the Fylkir, what does that actually mean? And what would the other Pagan religions call their top priests?

EDIT: I have found out something quite striking in the game localisation files, where the Aztec Court Chaplain is called a Sahagun, which should not be the case as the Nahuatl called their priests tlamacazqui. The man who is credited for learning and sharing alot about the Aztec religion is called Bernardino de Sahagún, a Spanish priest.

Edit: Also, something that's rather small and not important but bothers me none the less, what would the Greeks call a Pontifex Maximus?

Turns out "Fylkir" means "Arrayed" in Icelandic. So basically "person of cloth".
AFAIK, all other pagans have High Priests.

Well the in the romuva faith (all) priests should be called krivis (the highest priest krivių krivaitis). This name was documented by Peter von Dusburg in the Chronicon terrae Prussiae.
Not actual quote - translated from lithuanian: "In romuva lived a man, called krivis who was respected like pope /.../ To his will obeyed not only tribes mentioned earlier, but also lithuanians and other nations living in the land of Livonia. That big was his authorithy." - This might not be translated correctly, but you get the idea.

And Fylkir probably means chief in old norse

That is very interesting and corroborates with what I've just been reading about Romuva religion.

Huh, I found out there is a sports team called Fylkir in Iceland, but that's all I could find out about it's meaning (not that I doubt Paradox on this one because they after all Scandinavians and should know better than anyone), but it's interesting all the same.

Isn't it supposed to be composed of Norse-ish cognates to English "folk" + "-er", meaning something like "man of the people"?

Possibly. I just took the word and typed it in Icelandic Google translate.

I always assumed "Fylkir" had something to do with battle, because I recon a common norse battle formation was the "Fylking". But who knows?

If you reform your faith as a pagan other than Germanic, and then give a king title to a priest they are called Witch King / Witch Queen. Righteous!

Edit: Also, something that's rather small and not important but bothers me none the less, what would the Greeks call a Pontifex Maximus?

In general, the Pontifex Maximus was referred to in Greek literature as the Arkhiereus ("high priest"), or sometimes even the Arkhiereus Megistos ("highest high priest"); the good thing about that title is that, while the ancient Greeks never had anything like a religious head, Arkhiereus was a standard title of senior priests in the Successor States, so it has both a Greek and a Roman pedigree, and you can therefore play up either a Greek or a Roman angle with the title as much as you please. Arkhiereus Megistos, as I understand it, only ever really referred to the Roman high priest, so that one has some definitively Roman overtones, but that's not necessarily a bad thing; again, it depends on how much of a Roman influence you want to have in the title. A literal translation of the title would be something like Ergates/Kataskeuastes Gephyron Megistos/Hypatos ("highest maker/manufacturer of bridges"), but that's way too much of a mouthful for a CK2 title, and I don't believe the ancient Greeks ever actually used a term like that to refer to the Pontifex Maximus.
