Long story short, there are a lot of work-arounds to find vassal/subject overextension information when making a peace.
The only good way is to take the vassal overextension revolt risk multiplied by 20 to find the prior value, and then manually adding up the percentages from the peace deal, with no way to have them presented in-game if occupations have already been given to the vassal in question.

I'd like to see the gained overextension in a peace deal for every nation, as well as the end value.

I think rather than a lot of numbers (like how much OE someone has or will get) a simple (red coulered!) alert "this peace deal will put xxx over 100% OE" would be more helpful.

Either way is fine. Main point is that it is a manual hassle requiring either a notepad or good working memory to accomplish as of now.
I accidentally put a vassal at 101% OE, which rapidly spiralled the nation into disasters and i had to spend considerable time, money, effort and manpower to maintain peace.
