ethiopia has some stuff that come completely out of left field. African nations popping out of nowhere, animist stealing half your nation, etc.
Persia has some interesting anti ottoman events/missions.
Vaginagar into hindhustan is fairly intricate with the hindhu gods and dealing with all the other powers.
Ming is a mix between eastern france and OH MY GOD REBELS EVERYWHERE! Has some fun events that cause mass panic.
Japan has some cool events.
Venice is surprisingly fleshed out. Lots of events, but if you go after the ottomans first you do not get a lot of them.
Denmark has a bunch of events, as does sweden.
The Magreb (tunis and morroco) has a bunch of new random events, first they just tank your nations economy but then things start to turn around a bit. Very challenging, especially with the ibereans.
Songhai in Africa has some cool events.

Ayuthra (south of china, cant remember proper name) and Malaysia have some events and interesting playstyle.
Manchu-Qing are not that fleshed out event wise, but is fascinating transfering from khanate, to nomad monarchy, then asian empire. Dealing with korea, ming, and the various hordes is also challenging, and then raid boss Russia.
