I personally prefer Vic2 over EU3 and actually think Vicky is easier.

There tends to be, in my opinion, a larger amount of blobbing in EU3 (especially with France) than there is in Vic2. Then again I usually play as the United States, as I'm a US History buff. The whole atmosphere of the game seems more relaxed to me than the higher-octane EU3.

Seems to be a lot of debating whether Eu3 or Victoria 2, i'm hearing that Vic 2 is the next step after CK2 but a lot of people also saying Eu3 is their favourite. I guess the solution is to get both? I love the time period of Eu3 but I guess I'll get Vic 2, move onto Eu3, then perhaps give HOI3 another try ;) thanks!

Eu3 is much easier to get into than Victoria 2, imo.
Victoria 2 has much more details, or optional micro-management and things to look out for but is an awesome game if you like wearing monocles and hats.
Eu3 has a much more epic feel though and covers such a long time that it makes you say "phew" at the end of the game.
Hoi3 is the best game though. It just has an insane scale. The number of provinces, units, research, politicians and of course, almost no need to care about badboy.
If you like the character development (which I don't like), I guess Sengoku or Rome is also a good try.

In a nutshell, I would say EU3, then Victoria 2, then Hoi3 so like this you could make your own grand campaign... Sort of...

I'd say Victoria 2, but only if you have a history/politics/economics interest. It's a lot more modern, with POPs (Portion of Population) dictating the game more than characters (there are very few characters, just some generals get names, and some politicians are mentioned in events).
Not that I'm an expert in the field, but I'm going to use it to teach my girlfriend basic economics and politics. It is most definitely very historically interesting.

I used the basics/everyday/luxury system to budget when I think about my spending and it's far superior to what the standard apparently here is (basics and luxuries... how is that enough to understand spending in modern life?). Nevermind certain "teaching games" that have crappy gameplay. Victoria 2 teaches you history, it teaches you economics and it teaches you politics.

It is complex, but in a good way. It is both complex and accessable, in the same way that ck2 is. HOI3 I would say is not accessable, but if a requirement for a game being playable is that it be accessable v2 is most definitely accessable. You guys have just forgotten what playing the game at first was like. Simple fact is is that you can set the economy of your country to laissez faire and just declare war on random countries for fun until you understand how everything works in victoria 2. It doesn't chuck you in the deep end without a rope. There's enough metaphorical ropes. Victoria 2 has lots of "optional micro management" indeed.

King of Dragon Pass is a very similar game to CK2. It's a strategy game where you manage a tribe, look after characters, respond to random events etc.

Yup, excellent game (Probably one of my favorites of all times), and it is in a genre quite similar to CK (strategy/sim with an heavy roleplaying component). The OP asked about Paradox games, though, and KODP is not.

The only other games I have from Paradox are Sengoku (And I have a hard time getting into it. It feels like "CK2 in Japan, but not as good" to me), and the Mount and blade series (Warband is a very good game, but from a very different genre than CK)

It's CK2 light. The only things you do is waging wars and blobbing. Extremely boring after a few hours.

it was basically a engine test / tech demo, i'm not sure it was ever really expected to be a massively huge paradox game

That will depend on what do you like the most about CKII.

If it's the character driven gameplay: Mount&Blade Warband. It's a game where you directly control a single character from humble begginings to eventually being king of a whole continent. If you wish, tough, you can play merely as a roving mercenary, controlling a band of warriors for hire. You'll interact with kings, nobles, maidens in distress, the whole works. It lacks a bit in history, but if that's your fancy, the community has many mods that add to that aspect.

If it's the historical period: EU3. EU3 is a global historic simulator, taking you from the end of the 100 years war to the Napoleonic Wars. It's the most medieval-ish of the PI games, not counting CKII itself. As it has been pointed out, blobbing is tha bane of this game. If you don't like it, stay away from it.

If it's the historical 'feel': V2. Victoria 2 is one of my favourite games, if not THE favourite. It's grand, it's historical and it's awesome. Where else will you get trench-like warfare, with hundreds of thousands of troops involved?
