There isn't a Paradox game covering that period but there is

Crusader Kings, middle ages
Victoria, 19th + early 20th century
Hearts of Iron, a World War II game
EUII, about the same period as EUIII but different concept

They are similar to EUIII but not the same, but once you learned the basics of one game, you will see that those games all have very much in common

Then there are the Two Thrones and Crown Of The North also by Paradox but they aren't that good as they such small scope.

Or so I am told, haven't played them myself.
