So here I go, conquering a Bretagne-province, before King Henry gets Orleans. I proceed to take another province from Bretagne, but then: A separate peace with them is forced upon me, where I receive some money (I guess I had no saying in this peace, because all of my own provinces were occupied). No occupied provinces remain for me now, so England annexes me. Damn!

If all your core provinces, your capital, and all provinces with a land connection to your capital are occupied, then peace will be forced on you without you having any say in it.

A separate peace with Burgundy would prevent that.
Having said that, I have no idea how you get one at that stage.

As soon as that second province falls, you should make a separate peace with the Bretons where you demand the lesser in value of the two provinces you captured. At this point, England can't make any territorial demands without capturing it themselves, because they can never ask for your capital.

Well, it's rather the AI, which puzzles me. If they can force any (separate) peace upon me, why don't they do so as long as I still have only 1 province from Bretagne? No, Bretagne waits, until I get a second one (I have to lay siege on it since the Bretons allready threaten to re-conquer the first one - leaving me without any occupied province at all, which of course also means game over). And of course I am only at 16% war score or something with Bretagne, when I get the second province, so I can't get any separate peace which would provide me with one of their provinces (they are worth at least 8%).
So there seems to be no way out: As soon as I capture the second Breton province I am doomed. As I am if I lose the first one. Weird situation.
(separate peace-treaties with Burgundy or England do not work - not enough money to buy them)

Perhaps it was France that made separate peace with Bretagne?
They are your alliance leader, so you would then have peace with Bretagne, but not with England.
Because of this possibility I always go for English provinces in France when I play Orleans.
