There is an ai-only event (id 5043 in ai.txt) which moves the capital to prov 1373 Kujbysjev (and adds 15 inf divisions), if Moscow is threatened (ie on loss on Minsk, Smolensk, Vitebsk and Kaluga).

If you capture Kujbysjev after this event fires, then the (temporary) capital will move (possibly even back to Moscow is this is not yet captured), but I think that Kujbysjev will still be the capital that needs to be controlled for puppeting or annexing.

Iirc, the bitter peace event will occur after you take Moscow.
(assuming you already have taken the other needed vps)

Moscow usually is pretty hard to take.
It has good forts & aa.
It is better to have it surrounded so that when you do try to capture it you
will get the surrounded & enveloped modifiers.(attack from at least your 2
best directions)

Bitter peace needs several other provinces:
Paris (presumably so Stalin doesn't if there is a successful Western front), Moscow, Leningrad, Stalingrad, Baku plus either Magnitogorsk (Japan not Axis) or Vladivostok (if Japan is Axis). An AI Axis Japan which sits on its hands can prevent bitter peace entirely.
It is relatively slow to fire (5% chance every 7 days, so about 140 days on average).
Germany gets everything west of the Urals, but the Soviets keep their remaining divisions and all the industry they have built up with US Lend Lease events. Note that German allies get very limited gains (except Japan get big chunk of Siberia if Axis), even if they have conquered large areas.
