I've noticed a couple of general's with both the Offensive and Defensive trait. Why is this? Why not give them another skill point? Is it to show that the General is some kind of master of offense and defense?

[note: I'm not complaining, I just wonder what this would represent]

Since generals have a max skill cap, if you boosted their skill but removed the traits theoretically the general would be worse off than with the reverse. This would be because they would gain their subsequent skill levels more slowly, and when maxed out would have less positive modifiers than the same maxed out general with the traits. I guess it just represents guys who were exceptionally good at tactics.

How does leadership affect different stacks in a single provence? i.e. a headquarters with a field marshall, corps with lt. general and then individual divisions? I just the Field Marshall taken into account or are the others somehow factored in?

The Field Marshal's skill and traits (like every other Leader) affect only the units in his own Formation. Other units stacked with him get skill and trait modifiers from their own Leaders. The per-axis Command Capacity limit is the ONLY thing that the FM gives to other units in his stack... and even then, only if they are attacking along with him into the same target province.
