My game as Oda Nobunaga is getting to the point that overthrowing the Ashikaga Shogunate and forming Japan is feasible. Do I stick with Oda ideas or go for Japanese ideas?

I say keep them, they are incredibly powerful, no other idea set offers so many general bonuses.
Stay as Oda, taking Kyoto switches you into an inferior government form ("Independent Daimyo" government is so so much better). And yes, definitely keep Oda ideas, they are leagues ahead of most other ideagroups in this game.
