Conclave, Holy Fury, Monks & Mystics, Reaper's Due, Jade Dragon, Horse Lords - in that particular order. Just think of a budget before the sale and then buy them in that specific order until you hit your target budget.

I would say everything until and including Monks & Mystics is must have, the rest is nice to have.

This, except I would put Reaper's Due above Monks & Mystics. If nothing else, you'll appreciate the noticeable speed bump from the increased mortality, and it makes succession significantly less predictable (again, due to the increased mortality meaning that your perfectly groomed heir could come down with pneumonia and die before they inherit).

I have all DLCs and I always disable Conclave. Unless you like artificial factors to make your game a lot more annoying then enable Conclave. Conclave is meant for people to like to paint the map and play until late game. I don't do either so Conclave just ruins CK II for me.

TL;DR I recommend all DLCs except Conclave.

The main intention of Conclave is to "increase the challenge mid-to-late game"

Ain't that the truth. Here's three easy steps to increase game performance. Absolutely necessary if you plan to play from 769 to 1453, imho.

Holy Fury is also an absolute must have in my opinion. It changes the whole game dynamic for the better. And if you play Pagans, you don't want to miss out on all the awesome stuff this DLC provides.

I resisted using Conclave for a long time. I dislike a lot of its choices (there is literally no reason for childhood focuses other than Thrift, Duty (for Geniuses only), and Heritage to exist IMO, though some people apparently consider Struggle's rate of Dull acceptable), and wish you could turn certain parts off while leaving others on. But in the end, it's just not worth leaving it off- favors, not having to set individual guardians for children, Realm Peace, etc, all outweigh its problems and it gets to be just too much to pass up. Also not using Conclave often led to encountering more bugs in my experience, especially with other DLC- I get the distinct impression that "[X DLC] on but Conclave off" is one of the least-considered options in testing.

(I keep saying someday I'll tire of achievement-hunting and start modding to deal with some of my issues on this stuff, but it hasn't happened yet.)

Holy Fury is probably probably the #1 to-get, M&M is big... sometimes it's hard to remember which things are really from which DLC, though, especially the way DLC features get conflated with patch features sometimes.

Conclave and the Reaper's Due are two of the three best expansions. They are both amazing and give the game much more depth. After that probably Holy Fury and then Monks and Mystics.
