The "piss off!" choice(C?) doesn't seem to work with courtiers with different culture/religion. It only gives them "loyalty to liege +1.0". Playing as Byzantium, this happens with all my muslim/pagan, arabic/mongol etc courtiers.

Since we are talking about "I could be a better..." I'll add my comment here. I think there should be an option "ok. you get the job" with the result that the previous office keeper is pissed off of course.

If you mean to put him/her in the job, right now that's impossible. Its been asked numerous times before.

If you mean it should just lower the loyalty of the current one, that is possible, but i wonder if there will be a problem if it fires an event for a non-existing person, ie a courtier is complaining about being a marshall because you have none.
