After a pretty tyranical reign as King of Scotland, I am the Duke of Albany and a vassal of mine is Duke of Galloway.

However, despite controlling a province or two in the duchies of Lothian and Moray, at some point both of these Ducal titles have disappeared and I don't know why or how to retrieve them?

I've searched for existing Dukes or people in prison who might have the title, but am unable to find anyone. The Ducal shields are obviously gone from the map.

I'm not sure why I can't re-create these titles as King of Scotland either?

click on Lothain. In the middle left of the window it shows the de Jure ducal title. Click that to see who currently holds it.

Alas, that's the problem, the de Jure ducal title is missing. :(

If you click on Lothians shield for example(it's the topmost left in province view) you will open the title view. There you have a checkbox called "Show De Jure", which should display the Duchy Lothian is in. Click on that shield to see who holds it.

In your screenshot your arrows point to the De Facto ducal title. I.e the duke that currently rules it. Look to the left of the area where it tells you the income and manpower of the province. That's the de jure bit. I can just see a tiny bit of it peeking out in the bottom most picture. If you click the shield there it takes you straight to the title screen.
