I agree with OP, I like to do achievements, but in some cases its just tedious. Paradox games suffer from this I think a lot, with so many achievements requiring you to dominate the game, spending tens of hours before you can even attempt to get it... and each one with slightly different country and slightly different goals. It gives a bit of flavour, but gets really repetitive and tedious after a while, requiring tens of playthroughs each lasting tens of hours, almost all of them pretty much requiring you to dominate the game before you can get the requirements. I love to do all achievements in games I like, but stop when it becomes too tedious and time consuming... and not fun anymore. EU4 achievements currently feel like 100 hours of same old slightly differently just to get ... one obscure pun?
So, from me - please, more != better, especially tying almost every achievement to a different country that I need to play tens of hours just to maneuver myself to a position with reasonable shot at getting that one achievement pretty much ruins them for me, when in fact I would really like to care about them because I care about the game.
So, what exactly would I like?
More of:
Bomber Harris - destroy xy buildings with strategic bombing
Less of:
London blitz
Dresden firebombing
Doolittle raid
and 10 other increasingly more obscure strategic bombing achievements, each requiring you to do it with different country and with slightly different requirements...
