Newbie Question: Control vs. Ownership

Ok.. I'm starting to click a few things on how this game works, but I'm a bit confused about the difference between ownership and control.

When I go to war with a nation and take control of a province, how do I ultimatly change the ownership of that provinance to my country permenantly? Or is that even possible?

Yes that is possible. You have to make a peace deal with the owner of the province to get that province. Use the diplomacy menu and make a peace offer and demand either gold or land from your enemy.
