Latest mac version coresponds to the latest pc version (1.07 as I recall). All I can say is you must've been a victim of bad luck... I have been able to conquer France and Scotland as has others with the mac version.
About Scotland: In my experience they will recruit huge infantry armies which in the mountains are able to do rather well against your forces, what I would do is let them seige northumberland and use your fleet to land behind them to seige their capital. Atleast thats the way I did it
Also battles will be more random on early tech levels and less so later on.
