got a bit of a newb question but faqs don't seem to address it much. if the ai attacks me from 3 different provinces that border my province, how do i counter that? I've tried attacking the provinces they're attacking me from but it doesn't seem to make them weaker in attacking my province.

Yes, counter-attacks are the only viable solution if the attack progresses too fast for relieve forces to arrive. When counter-attacking, you will give the enemy's divisions the "flanked" penalty (-50% combat efficiency). This doesn't guarantee victory but it might just turn the tide.
Should the attack begin at night, you might rather send nearby forces to the province under attack using the "support defence" command. If they arrive in time, the enemy might suddenly fing himself outnumbered.

I would send more divsions there and attack there other providences I've seen this work but it is very risky so best to counter attack and get people there
