I think we need a screen, where you can ask to buy a provinces or peace screens, where you become the PU over France, but lose all provinces in France. If a athsor nation must do some think too you'll need it's agreement.

The established precedent is that strategy game AIs are absolutely terrible at assessing the value of give-and-take peace deals. (An uti possidetis option might be useful in a game with a different warfare structure, but in EU4's warfare structure that's not really a sensible idea.)

Also? If the AI is willing to sell a province, it will let suitable purchasers know that this is the case.
