Could you guys add Despotic government type for Despotate of Epirus and some of Greek Kingdom. That would be more historical and interesting.

...how would it be different? What mechanics would such a government bring to the table that explicitly require a government form to do? Is this any more than just a glorified name change?

All of the Greek Successor states after the Fourth Crusade modelled their state structure on the big ideal, the lost Empire in Constantinople. So making Epirus unique in that regard would be silly
