So I finally managed to do the Prester John achievment, as a person who's written several posts for suggestion on Ethiopia and northeastern africa it did take some time. While playing I got several ideas on how to expand flavor for the copts, while also fantazising about playing a game as a coptic egyptian trade empire (sounds cool)
First of: New holy site for copts.
There are 5 holy sites of copts in the game, each representing core coptic areas with a (in game) contemporary coptic population of significant size. Only one area of Coptic presence is omitted: Kerala in India

There still existed small oriental christian and nestorian kingdoms in Kerala in the 15th century and there was a significant christian population which had some contact with the christian church in the west.

Adding a sixth holy site will be a neat flavor for the player who wants to expand coptdom into India. Other events perhaps relating to conversation bonus for conquest might be appropriate (like the event patriarch of Africa)
Bonus could be a number of things like, but I'll suggest increased absolutism per year, as it's most likely that any coptic nation would conquer the province fairly late once absolutism mechanics are enabled. While absolutism itself is a very strong thing it is fairly easy to reach maximum aboslutism and shouldn't be OP for a coptic empire that large to own.
Kochin province would be the choice for the holy site.
Second: City of Edessa
Edessa was center of early christianity and lasted as such until the crusades.
First there would be decent place for a province of edessa to be carved out (mostly of northern Rakka there the city is located, but also surrounding parts of Malayta, Marash, Halab and Diyarbekir might be eligible)
Once Edessa is in coptic hands it should fire an event like the ones for Cairo and Sinai increasing conversation strenght. The base name of the province would be (Sanli)Urfa with Edessa appearing as a dynamic name

Third: Copts coming out of hiding in Assyria
There used to be these events for egypt and Nubia, increasing missionary strenght in the region. They've been reworked to the current, more sophisticated events concerning those regions, but I'd suggest adding events like these for the assyrian homeland in northern Iraq, most notably based on contemporary Assyrian demographics would be Mosul and Urmia.
Events leading to 'liberation' of copts in key coptic areas would create nice goal for coptic empires to aim for.
Fourth: Cilicia
Similiar there could be events for Adana province if conquered by a coptic empire to immediatly convert the province to Coptic religion and Armenian culture. The armenians still had a significant presence in the mountainous hinterlands of Cilicia after the fall of the Armenian Cilicia. This could also be made as a mission for copts with the same. This could otherwise be represented as a whole new province drawn in the Cilician hinterlands (armenian culture)
Fifth: Kachen principalities
Written about this in thread on the caucasus. Melikates was at this point in history a bunch of small independent armenian principalities/melikdomes https://en.wikipedia.org/wiki/Principality_of_Khachen
Should be made a OPM with armenian culture, coptic religion. Give the player a small chance to play as Armenia. Either use the already existing Armenia tag or make a new tag (Kachen/Artsakh) with Armenia as a formable.

As I said in the beginning, I'm planning a game as a coptic Egypt. Though that I don't like is the fact that the only two states avaible to Egyptians are Mamluks and Egypt, both using islamic crescents on their flag. If it wasn't for that I'd be happy to use the Egypt tag as I progress but I'll suggest the addition of a Coptic egyptian tag (Called Kemet). The tag would be formable for any coptic country with egyptian culture, and any egyptian culture province converting to coptic would automatically gain a Kemet core.

I played as Ethiopia and got the event that the Patriarch of Alexandra was missing, I had already conquered Alexandria
