The scenario I have in mind has likely been done before. I want to see what would happen if the allies had not intervened unless German had invaded France. I am curious if Germany had taken down Poland and then gone after Russia, same backstab just ignored France, could germany have beaten Russia?

Well, one way to do this is to change a single event: England's offer of alliance to Poland. Either remove this event or change the ai_chance so they'll pick the second option. You'll still have that non-agression treaty with the USSR, but that could be removed too with a little editing.
