Cradle of Civilization is a big one. Also the Cossacks for Muslim hordes and Mare Nostrum for raiding.

cuz sometimes Paradox add a new things on the game in the DLCs , This is why i am asking if there is any DLC is useful for Arab/Muslims countries

The first one I can think of for the Middle East is Cradle of Civilisation, but that has just been released and won't go on sale for a while I guess. Besides DLC specific for the Middle East you can always go for the 'basic' ones everybody has like Art of War, Common Sense, Cossacks and/or Rights of Man.

There are also the raid function in Mare Nostrum or Horde mechanics in Cossacks, but I don't think of them as Muslim "specific" mechanics per se.
