Hi I live in Canada and really love this game and would like a helpful friend to guide me along and play with me.
I just tried France as my first game and got dogpiled by Burgondy and Castille early on. That's not fun man ):Best advice I can give you is to play as France you cant lose even if u dont do anything.
I think england is a good start as long as you expect to lose the HYW and don't put everything into it. powerful, easy to crush neighbors and then you have an easily defendable island to yourself and a great trade node to learn various mechanics.
Am I the only one that played France as his first nation and got half of Europe in 200 years?
PS:The op should try England too since its quite remote and you could expand into Ireland quite fast.
Even the various rebels you get slapped with and can't often prevent (the Wars of the Roses, those bloody Lollards) are a useful experience in how to deal with rebels, without incurring much risk.
Id say Portugal is probably the best newbie friendly game to play.
Just maintain your alliance with Castile and you should be pretty good.
You will get to learn the cololnization/trade aspects of the game and most nation will leave you alone, giving you free rein to do what you please.

This advice was given to me when I started with EU3. I nearly gave up on the game because of it. Portugal is tediously boring to play (unless you do wierd stuff that a new player wouldn't be inclined to try).
Btw I guess we should recommend nations outside Europe as well for example for Asia I would say Timurids especially if you ally the Ottos and for Africa I find Ethiopia very easy.Oman is a good choice too if you want something in Arabia.Btw this is all my opinion if you think of something please else tell me.
