clipper transport is what you are looking for. the more you have the more you can transport. later in the game you can have steamer transports which are faster. note they are unarmed meaning they have no combat value. frigates and MoW are the initial fighting units and some more advanced countries have raiders too.

i'm new to victoria and i'm completely confused by the navies - which type is good at what? and which is good for transporting units, do all of them carry units because i had a fleet of 12 ships and my transport capacity only showed 1 - was this each ship or total?

Only transport ships carry troops, 1 division per ship. There are clipper transports and steamer transports depending on your level of tech.
Naval warfare in Victoria is sadly rather simplistic. Build the best ship type you have available.

so i want to have transports to carry the troops and warships to protect them

do clipper transports and steamer transports have different carrying capacities?
No, both have the same capacity: one transport per unit. Steamers just move a lot faster than clipper transports.

surely this would only matter if they are only unescorted - how fast do warships movein comparison
The actual numbers escape me, but steam-powered warships generally are faster than steamer transports, quite significantly so in the later warships (battleships, battlecruisers, et cetera). Hence the problem of your escorting ships potentially leaving your transports behind, if they're not all combined into a single formation.
