The default colonial nation names "<culture> <colonial region>" give crappy names like "Castilian Peru". When the nation designer was added, all the provinces got a denomyn for custom nations based in that province. When a special colonial name ("Canada", "Nova Scotia", "Floride" etc.) isn't available, use the name and demonym of the capital province of the CN. This will give more satisfactory CN names, and could also work with the system for culture-specific province names (if those were extended to include an appropriate demonym).
