Given the AARs I have read, I am hesitant to expect an MP version of EU in an initial release. However, the decision to move the game into real time seems to foreshadow such a feature; I can only hope.
My question is: if a MP version of EU were to emerge, how would a declaration of war or rejection of trade be handled? I understand that there is a diplomatic rating that reflects the amicablitity between two countries and expect that the AI would take this into consideration when determining whether to declare war or not. Is there any mechanism to dissuade a human opponent from declaring war on a nation with which he has a royal marriage or some such bond? Does stability decline in proportion to the strength of relations with the country on which one has declared war?

Yes we have multiplayer and yes stability decreases depending on relation between countries.
