I´d say Venice for Singleplayer, as it is the only nation I´ve played twice, the others only once. I like different countrys a bit, and the two Venice games were one with EEP and one without though.
In multiplayer I have only played 4 or so times, but never had a country twice.

Burgundy leading in the SP by only ONE POINT! Portugal leading in MP by ALSO ONE POINT!

I doubted this many people would play such different countries. i.e. I never played Nippon past 2 years cos I got bored :S
I haven't played France for one year, and don't even START about Austria. I prefer the North-Western HRE Much more promising and crusades throughout it towards the west to vassalize everybody
