Most fun achievements?

My funniest campaign so far has been Kinslayer as Ryazan, but that was before 1.22 and the Russia patch, I guess that's easier now. I also really enjoyed Nagaur and Manipur. Anything small and surrounded by many nations, including majors, is a blast imo.
I really enjoyed Switzerlake. I also enjoyed big blue blob, but I think a big part of that was due to an more or less unavoidable (at the time) civil war caused by a low legitimacy ruler. It really put a strain on manpower, money and time.
I often find that a big part of how much you enjoy doing achievements depends on how you decide to do it. For instance I really enjoyed doing Mare Nostrum as Byzantium, but I doubt I would find much enjoyment in doing it as a country like France or the Ottomans.

The early Reich achievement. I used to see if I could best my date every patch till they added the admin tech requirement
Agree with Sfan that getting the two Ryazan and the Manipur achievements were a lot of fun. I also enjoyed the Dithmarschen achievement a lot as it was interesting working out what opening moves were required.
My favourite achievements generally involve starting as a tiny nation that I would most likely never have thought of playing as and where the main difficulty of the achievement is getting the early expansion right. I'm not a massive fan of blobbing everywhere to get achievements.

Tatarstan (Kazan) and Prester John (Ethiopia) kept me interested and engaged.
I also liked Abu Baker II's Ambition (Mali) and Queen of Mercury (Kilwa), although they're definitely easygoing.

Dracula's Revenge was one of my first, and I loved Wallachia so yeah, that's my favorite achievement so far
Baltic Crusader was my favorite. TO is a fun nation with great ideas, and it’s a challenging achievement that requires thought and strategy while at the same time not being overly difficult or requiring you to do many if any restarts. Plus you can fittingly shout “DEUS VULT” the whole time.
Prestor John, and holy trinity. Prestor john is probably WAY harder now with the mamluk buff but should still be a blast craving through everything when you have the Portuguese arms. buff. Holy Trinity is just such a different way to play the Pope, as you are so aggressive in very off ways. Especially now that Ottos can declare on Knights again....puts the time restraint back in or your gonna have to go up against ottos... unless they get released at malta.
It's been tempting me but it looks intimidatingly close to the green blob. I might give it ago after I get bored of the mamluks.

Also combining “Tale of Two Families” with “Sun never sets on the Indian Empire” is fun.
So far, I have had great delusions in trying to get Wallachia, Serbia, Kazan and TO achievements due to overwhelming Ottoman or Russian oppositions.
