Im a big fan of baroque and the age of enlightenment. Is more accurate later start dates ever going to come to be? Are there mods that might address this? I would rather play vanilla though, i find mods are too detailed and take away the fun of the game

As @Junuxx mentioned above, the later start dates have been left unofficially untouched for years now. I wouldn't expect them to touch them up anytime soon, unless the community demands better later dates in large enough numbers.

Don't hold your breath, this feature has been (semi?) officially abandoned for years.
I recall a few years ago there was a dev diary with start date statistics, but I can't find it now. Almost everyone starts in 1444 and jumping around the start dates causes bugs of all kinds, so they decided to largely drop support. I don't expect any change to this and I imagine in EUV there will be a lot less start dates to choose from.

Maybe EU5 should just have scenarios again? ALot of them, but eliminating the day by day start dates to avoid that need for 365 days a year, 350 years perfection

Maybe EU5 should just have scenarios again?
If and when it happens, EU5 will almost certainly ship with a single, fixed start date just like Vicky 3 is going to.

Truly, life is suffering for the late-start player
Might I add to the point
"Most players pick the earliest start date to get the most playtime"
that this is despite many players usually not playing to the end.

Which means that many players could get as much playtime from say a 1492 start as they do from a 1444 start (e.g. stopping playing in1650s instead of 1600s or in 1750s instead of 1700s), but human nature is human nature and FOMO is a powerful force.

My bet is that they'll go with 1356 and 1444 as 2 start dates potentially for EU V.
Paradox chose 1444 for EU4 because they decided EU3's move to 1399 was too early a start date.

Why on God's good green earth would you imagine they'd go with 1356 for EU5?

Yes, it has also been said that the reason they chose 1444 is mostly to satisfy Byzantium fans by having it be playable.

Would anyone be up for an immersion pack to touch up and enhance the later start dates? If not, does anyone think paradox will do that for the few of us that prefer later start dates, 17th and 18th centuries?

100% sure there will be no immersion pack or DLC. The Extended Timeline mod is really the best bet for later start date players because it doesn't just add new start dates outside of the vanilla game's timeframe, it also improves the balance of the vanilla later start dates. Makes them a bit more playable.

I recall a few years ago there was a dev diary with start date statistics, but I can't find it now. Almost everyone starts in 1444 and jumping around the start dates causes bugs of all kinds, so they decided to largely drop support. I don't expect any change to this and I imagine in EUV there will be a lot less start dates to choose from.
This. Literally, almost EVERYBODY starts at 1444. I would not expect EU5 will even continue to support being able to freely select a start date. I would expect to see something like what CK3 does where you have two start dates and that's it.
