Unless it was changed in the mod it's a vanilla thing. As orthodox you cannot declare holy war on pagans while you have any provinces that are still pagan. Convert those first. Have you thought about integrating ZAP Mod? Would add alot of immersion for Persians/Zoroastrians

I have, but decided not to. While I like the idea of Persians who look more like Persians, I don't like the roundabout method with which it is done - i.e. having a separate culture. Might cause some unintended consequences, in my opinion.
Some issues I ran into towards the start of my first 1.4.1 game, as a Jewish Khazaria (starting off as the default king):
First, for some reason I couldn't swear fealty to either of the nearby empires, the option wasn't even available (no button on the emperor's diplomacy screen). This persisted even when I used the console to swap both my culture and religion to match his, in order to see if that was a requirement in VIET.
Second, the Maygars didn't loose all their land when Hungary was formed:
Third, unless it is celebrated within what the game would consider to be de jure Israel, Passover is eight days long, not seven.
Also, on another note, I disabled the prayers from the Jewish music pack. They made me feel uncomfortable, and, in my opinion, don't really work (and aren't really appropriate) as background music.
I admit I don't really like the selection I have for the Jewish music pack either, but I couldn't really find any good, legally free Jewish music online so I took whatever stuff I could find. I might try a second Jewish music pack and try to find a better selection, but given how difficult it was for me to find good legally free stuff the first time I'm uncertain whether I'll be able to find anything the second time.
Doing a bit of testing in vanilla, it appears that a king can only swear fealty to his de jure emperor, so that was the issue.
And yeah, I was talking about the localization saying seven days, not eight. (Both in the event text, and the transliterated Hebrew title.) Though, if the event does need to be longer than 7-8 days, why not toss in the counting of the Omer, and Shavuot as well?

Do I have to replace the VIET music folder from the vanila VIET mod pack if I wanna use PB modules?
Not sure if it's a vanilla or VIET bug, but while playing as ERE emperor, after I conquered all the de jure trebizond provinces, an even started popping up every few days that trebizond kingdom is part of the empire. It just keep giving me the same message over and over again.

Now seyously, I should take a look at that and see whats so wrong with your selection, which I wouldnt know as I play pdox games muted. Tbh its quite impossible to separate prayer and scripture from song in traditional jewish culture, but not everything is drony "Ave Maria" type songs. I know at least a few who would fit quite well in the background, and it shouldnt be too hard to find renditions in creative commons. I'll take a listen at what you have, see if it can be improved and get back to you on that.
For example I was going to try to find an appropriate version of Hava Nagila, because that's funny, but all the versions I found had some element of modern instrumentation - whether it used a piano, a brass band, modern drumming, or it felt too jazzy or rock-like, etc.
