Mingsplosion is now pretty a meme and occurs in most games BUT it should'nt be the only one to be victim of it.
It happened more in history ( like Russia in 1920 or Timurids in 1450)
When happened , the non independant nations appear breaking the state
Here is the potentials victims;

-Mali ( can always happen with the disaster) ( I say add nothing for them they are already victim of it
-Timourids ( always happen with the situations)
-Moscovy : with a great defeat against nomads , an event can cause the vassal/non independant princedoms to retake their place like Vladimir ,Rostov ,Tver or Nijni Novgorod
-France :- If Burgundy wins the win of Public League , it can causeFrance to break up in small duchy statewith Champagne/Dauphiné/Toulouse in exemple
-Ottomans : Ankara 2.0 event situation with the return of the Turkish Beylik and maybe more
-Turkoman confederations ( Aq Qoyunlu /Qara Qoyunlu) : Can dissolves once death of the leader in a war
-Castille : It is written in the presentation whenyou start a game but Castille is not a united kingdom buta union of state ( like Seville, Murcia) . If the Castillan Monarchy goes into cHAOS due to the Cortes , it is possile to see a full break up of Castille in many principalities.
-Tlemcen can break in the hinterland if the tribes cannot be fulfilled ( with Alger or Kabylia)
-Georgia (because IT IS UNITED in 1444) but breaks fast in 1448 and 1460
-Mamluks : can break into smaller states if the Sultanate goes into civil wars ( withBeylik of Alep/Damascus/Cyrenaica)
-Bahmani (already happen in game in theory) happen with Vijanayagar event look alike

This offers more historical situations for dealing in EU4 troubled history. NOTE: MOST OF THESE HAPPEN ONLY IN DISCOVERY PERIOD.

Rather than hand-craft a bunch of railroadish event chains for a handful of nations, wouldn't it make more sense to create a generic National Collapse disaster that any nation could fall prey to?

What the game urgently needs is indeed the potential explosion of huge blobs - including and especially those of the human player. The Indian situation is in this respect distressing: we never see the Marathi confederation forming, and the two or even three great local powers remain very stable to the point of fully sharing the subcontinent, which is not very realistic. Brunwulf's suggestion is rather good, but for the Ottoman Empire I would rather put Greek rebels - and besides it would be good that in 1444 a large part of Anatolia, especially coastal, either of Greek culture (again for the sake of realism).

I think the Turkish Beyliks is preferable than greek rebels (because if Ottoman lost to the Turkish Beyliks greece will be kinda independant under Byzantium ( we speak in this of 1444 start date) and also a parallel to Ankara battle / due to the Ottoman not having a strong and powerful government yet , remember that if Mehmed II was a less genious, battles like the battle of Oktubeli could had broke the Ottoman state or at least severly weaken it. It is sad that the Beylik of Afshar never appear.

I agree also with the Blobs. If Castille had to wait until 1492 to conquer Granada it was for a good reason. Also it is sad that no event show for Cortes of southern provinces.

I prefer railroadish event for a handful of nations because : 1- All nations hasn't the same history /Nature of state and legitimacy : You cannot breaks England in great princepalities like France or splitting state like Bahmani did. 2- This will unlikely happen with AI or Player in Charge especially Lucky nations
3- I prefer doing historical approach rather than generic approach. 4- Try to play it ^^ and you will not enjoy as i would do however i would undestand why. The best exemple of a nation like that is Mali and Majapahit ; you suffer in the Beginning but then poof you re a big ass superpower.

Here are new nations who can do a little break up after i did some research :

England :Breaking England is very hard but can happen in war of Two Roses :(a better representative way i even think). England will split between the great royal duchies and fight for supremacy until England is united. The duchies can be :
-York and Lancaster (for royal contendance) ,Sommerset ( descendant of John of Gand)
-Northumberland and Warwick (Neville and Percy) / Norfolk Pembroke
This would give a better look to England and set a good fashioned war of two roses rather than Three rebels easely taken down.

-Provence and Bavaria/Brunswick : Salian Law : Before 1503 Bavaria divided in many duchies. Some branches died and Albrecht III united the Wittlesbach of Bavaria. What is happening is that each time a duke died and he own a possession that can inherited as a new duchy , he can give to a son a new duchy ( against stability low) until the succession is fixed. Same with Brunswick (which will fix the Brunswick situation)
Provence is tricky but with King Rene inheritence ( WHICH SHOULD HAPPEN IN EU4 ) , you can have a division of the estate of Rene if badly managed with division between Anjou/ Maine Bar and Lorraine.

I'd like some nations to split off and declare war on their former overlords if there is a pretender war going on to where if the pretenders siege provinces that have a nation that doesn't exist that have a core become independent with the pretender being the ruler of it. For example: If pretender rebels in England siege down Wales, they can get independence with the pretenders in charge and officially declare war with the Independence CB.

But the disaster with bankcrupcy, so we can no longer abuse it and dont suffer from it. like 300% more rebellions and it should break away faster, but the cores should remain. The thing with mogul, where it lost 80% of India and retook all in in a few Years, as to show how much influence a good ruler had or bad luck.

Like in "Le courier du tzar"

Polish-Lithuanian Commonwealth - Lithuanian Civil War can lead to situation, where any stronger szlachta/magnateria family can create own local, independent duchies.
