Is there a mechanism for the AI not to grant military access to another AI? Example. Playing as Byzantium I declare war on the Turks and their Crimean allies. Now Moldavia grants Crimea access, altough they like me more... Is there a way for me to prevent this access?

the only way is: after declaring and winning a war, you can ask for annul treaties. This option will annul everything for 10 years.

It sucks, i actually i don't understand why Paradox don't add a line in diplomatic screen to ask to annul milittary access

YES exactly! I am waiting for such an option for a long time. It would be very nice to see if they implemented it.

Generally, AI will always give military access unless they have hostile, outraged, or rival attitude towards someone, or they have very low opinion of them (-100 or lower). You can check all this using the opinions mapmode. If none of those things are true, then assume they would give access.
