I feel... cheated now since I even did save scum to get opposite gender ruler with aragon and still failed

Bad luck. You could try to get into a queen regency on purpose on an early date and hope you have better odds of getting it.

There's somewhat a way to salvage it.

3 wars. One to take Naples. One to take land. One to Vassalize Aragon. Then vassal feed aragon to their province limit and form Spain.

Even easier: Aragon starts with the same dynasty as Castille, watch for succession, and the moment there is no heir or a weak one, claim the throne and force a PU.
