Is it possible to force immigration by invading and occupying other countries? I know that pops immigrate when they can't fill needs or get jobs, so I'm wondering if I could occupy Spain for awhile, shut down all their factories, and just let their population flee en masse into my waiting arms.

Yeah, that works except that the migrants may choose another country to go so you won't benefit from them, but if you're the main migration target it works.
A lazy way to do it it to subsidize wars in Europe so that they last longer. To trigger crisis wars and not care about your allies in Europe etc.
Basically the more chaotic and desperate Europe is, the better for you.
Then later you can support chinese civil war for the same purpose (only once China has westernized obviously)
