I'm not an expert on the topic, but considering that CK3 differenciates Muslim schools of thought, maybe 1066 Maghreb (not sure about 867, maybe also) shouldn't be Ash'ari (considered ingame as Arabian-Levantine mainstream Sunni Islam, according to the game files), but instead Maliki. The Almoravids should definitely reflect some of this, as they were related to a conservative movement linked to this school.

Also, it would be nice to have a somewhat scripted event or decision about the rise of the Almohads.

But Maliki is not a School of Thought/Aqeeda which includes Ashari, Maturidi, Mutazilites, Athari, etc.,

It's a School of Jurisprudence/Madhab (Maliki, Hanafi, Hanbali, and Shafi'i) which the game doesn't simulate.
