The keyboard shortcut to quit the game is still the Windows specific Alt-F4 in the Mac version. It should be Command-Q as per this Apple support article as well as common usage on Mac OS X. Every other application employs Command-Q, and people are simply used to it.
I'm not sure if the Windows version of CK2 supports Alt-Tab or Windows-Tab. Neither Alt-Tab or Command-Tab currently work in the OS X version.
When running CK2 in windowed mode, the game lacks a keyboard shortcut to hide the game window, although the option itself is present in the menu bar when using the mouse. Command-H would be appropriate here.
Furthermore, the CK2 launcher also lacks any and all keyboard shortcuts. It cannot be closed or hidden, and it continues to run even when the launcher window is closed. The only way is to force-quit it by use of Alt-Command-Escape, the equivalent of killing a program through the Task Manager on Windows. Ideally, Command-Q and Command-H should work here as well.
