So i got like 400 hours played in EU4 and always looked for tags that offered a distinctive experience, be it by geographical position or ideas or some other stuff.

So far i played

Scandinavia (Denmark) as a colonial powerhouse,
Brandenburg as a militaristic state,
Austria as a diplomatic powerhouse
Venice as a merchant powerhoue (expanding into asia with trade companies),
Burgundy -> Netherlands to experience the Dutch Republic.

All of them offered a very distinctive and fun experience.

For these reasons i expect Hansa, Portugal, Castille, England, France to offer roughly similar experiences.

What other countries do you believe to offer something interesting?

I have suspicions that playing as papal state could provide some fun experience.
How about the new world? Is it worth it?
Are asian religions distinctive enough to warrant an entire playthrough?

All the nations you're mentioning are powers. They're nothing like playing a Hindu in India, a west or east African, North American tribe, or horde. I could go on with other areas but basically try games in different regions of the world and figure out the challenges that will be presented and how to counter them. Also, how's there no Byzantium run in that list?

There's a new 1.9 achievement that's going to be very easy and great fun: Form Malaya. You might give that a spin. Start as Majapahit. Cheers.
D'oh I skipped the spice island countries! Play the game dependent on the sea (at least to start).

I will try to sketch a list of types-of-gameplay for nations.

Indian Nation (Hindu/Sunni is a bit different)
Spice Island nations (easy: Malacca/Pasai/Brunei/Majapahit, all different and interesting. Medium: Siak Harder:Everyone else)
Japanese Daimyo (Difficulty level from the easiest: Otomo,Takeda,Uesugi,Hosokawa,Rest) or Japan itself. Keep in mind that before you became shogun it's better to switch art of war off.
South American Natives
Central American Natives
North Am...
Ming
Jurchchen tribe
Siberian tribe
Ayutthaya
U-Tsam (the only RotW republic)
Nadj
Ottos
Palatinate/Saxony
Italian States
Denmark/Hansa/Norway
Sweden/Poland
Italian State
Dutch Minor (or Hansa or anything who formes Netherlands apart from Burgundy)
Aragon
Venice/Genoa (different flavour yet similar, Genoa has more variety, Venice is easier)
Provence (it's like the easier Albania)
West African State (Songhai)
East African State (Ethiopia)
Horde
Austria/France/Burgundy (hard to say that Austria offers diplomatic gameplay. Killing everyone with your 60 forcelimit does not look diplomatic to me)

Looking at the tags you've played so far, I'd recommend Byzantium for a truly different feel. You're all that remain of a once great empire and nothing is more rewarding than trying to restore the empire to its former glory :)

The thing that i noticed about Byzantium, is that it still has cores in ottoman greek territory, which is a huge help. I don't want to play a conquest game, and i've already had plenty of fun in that region with Venice :)

Wait. The Hansa can form the Netherlands? Holy cow I need to go do this.
If this is true, thank you for the game idea!
You need to move your capital to the Dutch-cultured province and do the "Accept Culture Shift" decision. In fact you may do weirder stuff like becoming Prussia as Poland, but Hansa thing don't require gaming (selling provinces to vassals) since you own not that many Hannoverian provinces.

Oh, I thought he meant that The Hansa could form the Netherlands without culture shifting. Seemed a lot cooler that way.

Dunno why you're posting in the EUIV forum, then. I suggest Victoria 2.
