I have purchased most of the DLCs (except for some portraits and music), and they are enabled in the game, but I would like to disable some of them for some playthroughs. I've read that the way to it is unticking a checkbox from the launcher... the only problem is that there's no such launcher.

Am I missing something? Is there any other way to disable an specific DLC?

Theres no launcher for the linux version yet, but hopefully they will fix that in a future patch.

Untill then you have 2 choices, either manually copy the dlc you don't want to use in to a different directory and delete it from /dlc,
or there is an unofficial mod that replicates the launcher for linux here: http://forum.paradoxplaza.com/forum/showthread.php?660805-Qt-Alternative-CK2-Launcher,
theres also another similar one somewhere, but I can't find the link for it right now.

I assume the logic is that if you do not exclude any DLCs, it loads all the DLCs in the dlc/-directory. The weird thing is, it loads no DLCs for me.

Double check if your DLC folder is DLC or dlc. If it's DLC, rename it to dlc.

The trick is to use the -forcedlc flag when running CK2.
