I was trying to play the fantasy Knights, but I never got the first event to trigger. Isn't the condition just that the Ottomans control (not own)Constantinople? For whatever reason it never fired. I did select the "fantasy" option at the beginning.

You should check in savegame if your game includes mention about AGCEEP_Fantasy_KnightsHospitallier.eue. It's below log, events fired and sleepevents. Then I restarted a game and immediately triggered it from the console, and it did fire.
Maybe it isn't always registering as a "fantasy" game for some reason? It does seem odd.
"The Knights" has been changed to the "Order of Saint John"; consequently, the file's name has been changed to AGCEEP_Fantasy_OrderSaintJohn.
