I've just finished conquering the Mameluks with Turkey and made a vassal out of the Kingdom of Jerusalem. It appears however, that I am unable to select the Kingdom of Jerusalem when I exit the game to select a new nation to play. Anyone know how I can do this, or do I need a special mod?

I do not believe the Kingdom of Jerusalem existed at any of the game's start dates. This means that the only way to have it would be to release it as a vassal or have it rebel during the game.. you should be able to play it if you save a game where it has been released and load it up.

I know how to play them. First you need to release them, as you have done. and then save and then open savegame file (the bigger) with notepad.

Then you should first see list of tags used in this savegame. add the tag of Jerusalem, JER, to the long tag list, no matter where you put it just as you put it in the tag line.

Then save and open Eu2. Then you click your savegame, and then you know what to do. Kingdom of Jerusalem should be available then.

The other way is to convert over from Crusader Kings after playing through a game where Kingdom of Jerusalem exists. This can create a lot of changes amongst the system that you nromally play in as it might be stronger or weaker and so will it's neighbors in response.

But how on earth are you going to travel from Prussia to Holy Land to form countries while holding back Polish and beating Arabs to get the Holy Land?

Yeah, they should be able to form KoJ, but as it is, I find it quite difficult for TO to actually conquer the holy land and form KoJ.
But theoretically should they be able. However, I find it much better for the TO to form Prussia. If they can hold Poland that is of course

Yes, the Teutonic Knights was formed in the Holy Land, then moved to Hungary. They got thrown out after trying to form their own little sovereignity out of Hungarian soil, and was finally invited by the Duke of Masovia to help them in their struggle against the Baltic Pagans in exchange for some land. Eventually they threw off polish rule and created a well organised baltic state.

Not sure how of a "good fight" they fought, seeing how they ruthlessly handled the Baltic pagans, almost exterminating the native Prussians and filled the lands with german settlers.

Suposedly God is a pool of kindness, still, we can see the countless punishments He handed to men - the deluge being a prime example.

About teutonic order getting into Jerusalem... I guess if you can diplomatically get MA over all the place till the Mameluks, conquering Jerusalem may be possible.
