I'd argue that Great Britain with Ireland should be UKE, since it'd basically be the United Kingdom, and obviously UKS for if it was formed by Scotland.

Indeed, Edward I would've done it in the 1290s if he had been able to get away with it. The idea of uniting the island is old, it just took until 1707 to do it.

Two leopard is the French version and the three one is for english-normand islands. I can't remember who decided to switch from two to three and for what reason.

You must remember that Scotland only survived for so long due to the English being largely unwilling to conquer the place. They invaded and occupied it a few times but their wars with France were always deemed more important.
Had the English monarchy decided that Scotland would join the English domain rather than spending the vast majority of their time and effort trying to make Frence join their domain then I bet the UK would have formed by 1500 or so.
I'd reckon the best bet for ensuring Scottish survival until later on would be to make their provinces richer and provide more manpower and to remove the two English missions of "Conquer Scotland" and "Vassilise Scotland", keeping them off the radar.
