I am playing Manchu, its 1505, I own all of modern-day Mongolia, Manchuria and %80 of Korea. Japan has not formed yet but Ashikaga still has its vassal swarm (with all of their liberty desire being lower than %50, mind you). I am planing on attacking Ming because they have tons of rebels, have less troops then me and they have 10 mandate and going down cause of devastation. If I call Chagatai, it would be an easy war but Japan declared on me, I don't have the navy to siege the Home Islands even tho they have 2x less troops then me. They keep blockading my ports and killing my income (I am a horde so I already don't have a very good economy, combine it with unbalanced research and I don't have a stable economy).

What can/should I do ? My tech is 3/7/7 (I know, bad)

If Japan declared war on you then you can just defend whatever objective they're trying to take.

If they try and land you can simply stack wipe them. And at the end of the war, demand a ton of money and maybe even war reperations...

They want Jeju (the small island in Korea) and they took it because, like a normal person, I didn't put 25k troops there. I have, like, -%20 war score.

Well you can either build a navy. A second option is to wait for them to land on your lands and slaughter them, but they don't always do that(you can lower maintenance to make yourself a more 'attractive' target. The other option is to accept that you lost and give them the island.

I'm surprised you even have an income for Japan to kill as Manchu, should've taken Ming down already.
It's, like, my second time forming Manchu, still learning

Edit : Also, Ming didn't have rebels for a long time. I can't really change that, attacking a Ming who has 60 mandate while also having no rebels would be suicidal.

That's why you declare war right after they took a reform, usually they will only have 20-30 mandate then.

Ming are not guaranteed to collapse by themselves every game. Some game they just stay alive as great power.
If that happened, I would have declared but it would have been a little bit late. Like I said, I'm not very good at the game let alone Manchu

After you conquer all of Manchuria, if you haven't razed it too much, you should be at 300 development. You should stop paying tribute around this time, this will trigger the Nomadic Frontier disaster for them, which basically makes their armies warm butter when it fires.

Edit: You shouldn't worry too much about making money before you become emperor, just invest in your armies and blitz through Manchuria, then start pounding at Ming, with experience you'll see better ways to milk them out of money, but the bank of Ming will fix your debts right up (once the devs fix the money peace treaty bug). Although when it dries and you become emperor, you'll have to change your priorities drastically into investing in your economy. I, at least, have not yet managed to have a healthy economy already at this point.

So what happened?
They took Jeju and that was it. It's going, eh, not too bad for now, I guess... I have the Mandate because I really wanted the achievement and I got some tributaries like Oirat and Buryatia (an OPM that exploded from Oirat a long time ago) so I have positive mandate. Casually raiding Ming and Shen whenever the truce is up.

Since I have Unify China CB, its really easy to take provinces left and right. Chagatai was pretty big so I allied them (to keep Japan away from me), I'll probably make them a tributary at some point tho.

Don’t overestimate the AI. You can go toe to toe with Ming at full Mandate. Keep your army together and choose your battles and make sure you have the ticking warscore.

Demolish their armies on flatgeound (using your free siege of shenyang for that can be great). Send smaller forces you are willing to lose to scorch their land to remove prosperity and increase devastation.

You should get some events for big boosts to the Unguarded Nomadic Frontier, and once that fires it is game over.

You can raze everything, you just need to hit 300 dev someway or another. I don't raze at all, but I suck at playing hordes, I only play Manchu to conquer China.
I just raze everything and then develop Hancheong (the capital of Korea) since its the only farmlands so I can get instutions
