jade dragon brought in a chinese-themed expansion without China. Really that's fine; China is ridiculously big for the game to handle and would require an insane government overhaul to represent the strange centralised bureaucracy that ruled.
That said, that doesnt have to mean Japan and Korea are sidelined too. Both these regions have very interesting histories; Korea trying constantly to unify its Three Kingdoms whilst the power of Japan's centralised Imperial Court is challenged by regional warrior aristocrats, and both countries are subject to Mongol invasions (until they died in a tornado) as well as interesting relationships with China.
In terms of size, Japan and Korea are far smaller than the monster that is China( which assumedly could be blanked out on the map, or just represented with a one-province tag) and their government mechanics resemble Feudalism much more closely.
Thoughts?
