I find it nearly impossible to find claimants with a strong claim who will join my court. So is there some sort of view where I can see a list of all independent rulers or something like that? Basically I'd like to check once in a while if there are any women or children so that I can take a weak claimant. Of course I could go through and click on every independent realm, but that would take a while to do.

well, you could write an external program that could run parallel with ck2 and send updates to a smartphone, but that's...

in any case, periodically observing who is in what throne and where is pretty much part of the gameplay of ck2 during peace time anyway. Still, you could mark the rulers of specific realms as persons of interest (right click portrait, then right click the head silhouette icon then click the star icon) so that you could monitor who rises and falls slightly more easily (you could also set it up such that the persons of interest have pop-up messages)
