I am actually uncertain if they have to be kept, but I kept them in storage until the achievement popped so I could keep track of what I had.

... note, the achievement should be for all the 'Mech chassis in the main game, not ones in the expansion. A full list follows, grabbed from here:

Light: Locust, Commando, Spider, UrbanMech, Firestarter, Jenner, Panther
Medium: Cicada, Blackjack, Vindicator, Centurion, Enforcer, Hunchback, Trebuchet, Griffin, Kintaro, Shadow Hawk, Wolverine
Heavy: Dragon, Quickdraw, Catapult, JagerMech, Thunderbolt, Cataphract, Grasshopper, Black Knight, Orion

One for each mech type, or each variant from the base game?

Each variant. One of the Catapult variants was the last one I completed.

The achievement guide says type, but I believe the Catapult K2 is a special case. As I have the achievement, I can't trigger it again to be certain.
