I'm sure the event that makes gives you an army led by 3 witches would be gone but does it also turn off the suspected demon spawn event? Since I don't want to play with immortals but I still like getting the son of satan spawn every few games.

Search the event folder for the tag "supernatural_events" -- there are a lot. Demon spawn is one. Wolf child is another. Reincarnation.. Jesus's voice... leprosy miracle... etc etc

Immortals really only impact your game if you, the player, chooses to pursue immortality. Otherwise, no immortals will ever appear -- it's a strict player-only event chain.

One of the things I've always liked about CK2 is how even the supernatural events can have very mundane explanations - That hellmouth? Just a sinkhole. Werewolf? Poor syphilitic duke is just a lunatic. Possessed? Turns out ingesting liquid mercury Isn't a cure-all.

If you keep supernatural on for the bulk of events that could go either way, but know for a fact that there's no justifying a 500 year old monarch, worry not. That particular event chain comes with a few branches and options, the bulk of which are failures, so you can even choose to pursue it and know that you'll find disappointing mortality at the end. So far, I've allowed two rulers to actively try to cheat death and come back empty-handed, but even failing the adventure can be enjoyable. And keeps things within the bounds of reality.

Multiplayer, I assume. Though it's worth noting that according to Steam, no one has yet actually got it.

Are they? I really have no idea - don't generally play either Ironman or Multiplayer.

The event chain to become immortal will spawn immortals later in the event chain

I don't think it always will do, though. It didn't seem to do so for me.

You could become immortal, get forced to abdicate, then kill the previous character though, presumably.
